My family, like so many others, emigrated from Italy to America at the turn of the 20th Century seeking a better way of life. They settled in one of the many Italian enclaves of New York at that time. These neighborhoods acted as safe havens for the traditions, culture, food and way of life of Italian immigrants. Many traditions and customs have been lost over time, but there is one thing that we have not lost and never will - pasta. It connects us to our roots, to one another, and to strangers.

Making pasta from scratch hearkens back to simpler times, helping "nonna" make gnocchi or cavatelli for Sunday dinner. We believe that it is important for us to keep these traditions alive. To connect our past and our present and honor where we came from. That's why we're here - to provide you with the tools to keep this connection alive through the tradition of the pastaio, or "pasta maker."

Our experiences sharing food with the people close to us build rich relationships and special memories. Memories like making gnocchi with my nonna are what inspired "PastaVirtuoso" as an experiment in making and sharing excellent, homemade food, especially pasta, and eventually grew into a desire to bring those experiences to others in their own kitchens.

It doesn't matter who you are or where you're from, everyone has the same reaction when you tell them the pasta they are eating was made by hand by you. They always say, "Wow, you made this yourself?!" It makes us and them feel appreciation, love, and a little bit of pride. That's at the heart of who we all are, and what means so much to us.
